Few monikers in Burgundy are more identifiable than "PYCM."

In its inception, PYCM began as the négoce label 'Colin-Morey,' with 2005 marking the last year of exclusively négoce production. Since then, Pierre-Yves has gradually augmented his domaine holdings, beginning with his 13-hectare share of Domaine Marc Colin and supplemented by seven hectares inherited by his wife, Caroline Morey.

Today, Pierre-Yves works with 17-hectares, 13 of which are estate-owned. When he purchases fruit from the remaining 4-hectares, it is sourced from parcels that his team cultivates and harvest themselves, applying the same level of rigor and accountability as to their own vines... something few producers adhere to.

The rudiments to the domaine's winemaking have changed considerably since upgrading to larger cellars in Chassagne. Now, Pierre-Yves has extended the élevage of his lesser appellations to match top cuvées (all in 350L demi-muids), maturing them for 22 months on lees and racking to tank only once prior to bottling. No battonage, no fining, and no filtration.
