Champagne Julien Prelat | Hidden Gem in Celles-Sur-Ource

Squint and you'll see it: the subtle bottle design homage to Roses de Jeanne, the close friend of Julien Prélat. Julien's eponymous grower project was born in 2010, when he decided to stop selling his vin clair to Champagnes houses, a practice he adhered to for a decade.

Located in Celles-Sur-Ource in the Côte des Bar, Julien and his wife, Karine, are at the far southern end of Champagne, living closer to Burgundy's Chablis than to the Côte de Blancs, Montagne de Reims or Vallée de la Marne. Like Cedric, Julien's displaying the terroir of each parcel through their shared quality-focused dogma: Single vintage, single varietal, and single parcel. That means organic farming principles and extremely low yields picked at physiological ripeness for better phenolic flavor development.

Fermented with native yeasts and aged in 228L barrels, Julien tastes his vin clair throughout, sending each vintage to bottle for tirage at varying times, only when deemed ready. Unlike Cédric, Julien frames his wines perfectly at disgorgement with a hint of dosage to balance the wine's freshness with weight and lift As with great Burgundy, the wines of the Aube broaden and become more vinous with air, and the same is true for Julien's wines.

NV Julien Prélat Champagne Presle Blanc de Blancs (2024)
Presle may sound familiar too as it is the same terroir as Cedric's wine of the same name, though Prélat's is 100% Chardonnay.

NV Julien Prélat Champagne Chantemerle Blanc de Noirs Extra Brut (2024)
From a small parcel of vines planted in 1982.
